Have you ever wanted to buy new cookware but didn't know what kind to buy? There are many types of cookware from which to choose. The following is a summary of the different materials that are used in cookware. Cast Iron ? Your grandmother probably had a cast iron skillet. It is heavy an inexpensive. It also conducts heat slowly and evenly and can be used in the oven or on the stove. Copper ? Copper is popular because it conducts heat evenly and quickly. It is a very good choice for frying and sautéing. It is also very pretty. Aluminum ? This is inexpensive, lightweight, and responsive to heat. However, it can affect the taste of the food you eat. Stainless Steel ? It is moderately priced and is very strong. It usually is mixed with an aluminum or copper core to help conduct heat. And it too is very pretty. Non-Stick ? With a non-stick surface, food does not stick to the pan and cleanup is easier. If also cuts down on the amount of fat that is needed for cooking. When cleaning up, you will want to stay away from abrasive cleaners. Finding the right cookware for your cooking style is very important. If ease is on your mind, then non-stick is the way to go. However, you may be more interested in the beauty of copper. But no matter what your choice, there are many options in the market place to find your new cookware. Maybe it's the fresh air; maybe it's the appetites that we work up in the woods. Cooking Filet Mignon Filet mignon is French, of course, with filet meaning "thick slice" and mignon meaning "dainty." Filet mignon comes from the small end of the tenderloin (called the short loin) which is found on the back rib cage of the animal. This area of the animal is not weight-bearing, thus the connective tissue is not toughened by exercise resulting in extremely tender meat. This also means that the meat lacks some of the flavor held by meat that has the bone attached. In order keep the flavor, you must cook filet mignon quickly. This can be done a variety of ways, including broiling and grilling. It should never be cooked beyond medium rare, because the more done it is, the less tender and more dry it becomes and the more flavor it will lose. You should always use a dry method of cooking, even when it will be a quick method. Methods of cooking that are dry are such types as roasting, pan frying, grilling, broiling, etc. Since this cut of meat is more dry than others, you will not want to cut the meat to check to see if it is done. Instead, you should touch it. The touch-method of checking is not as hard as it may sound: The Art of the Marinade It's a sad fact that these days it has become almost essential to marinade most cuts of meat, unless you intend to casserole them. As oils and fats age, they oxidize. Oxidation is the process that turns fats rancid. Rancid foods not only taste bad, they are unhealthy. As fats and oils breakdown, they become toxic. These oxidized oils promote arterial damage, cancer, inflammation, degenerative diseases, and premature aging. So it is important that we store fats properly, use all fatty foods well before they become rancid, and discard those foods that have been stored too long. What is Gluten and Why does it Matter? Gluten is a substance made up of the proteins found in wheat flour that gives bread its structure, strength, and texture. Without these marvelous little proteins, bread would not be bread.
