Cool Summertime Cooking
Summertime--and the living is easy! But the kitchen is hot!! It's time for some cool cooking recipes and tips! 1. Cook outdoors. When you have some time, perhaps on the weekend, grill up several entrees at once. Then freeze and you have your main dishes ready for the next week. To help you out, here is a marinade recipe that I use for the "cheap" cuts of beef and pork: 1/2 cup soy sauce Just whisk it all together and pour over your meat. Let sit in fridge, turning occasionally, for a couple of hours. 2. Use your crockpot. You don't have to make a complicated recipe. If you are short of time in the mornings, just put a whole chicken in the crock, salt and pepper, cover and cook on low all day. When it's suppertime, all you have to do is add a salad and you're done! 3. Learn to use your leftovers. The chicken leftover from your crockpot can be chopped and made into a casserole that can be warmed up in the microwave: Mix 1 1/2 to 2 cups chopped chicken with some chopped onion, a can of cream of mushroom soup, a can of cream of celery soup and about 1 1/2 cups of cooked macaroni. Pour into a casserole dish, top with cheese and heat in microwave until heated through. 4. Cook in the cool of the morning. If your family just has to have that fried chicken, why not do it in the morning and warm it up at suppertime? 5. Stop by the deli--I know this is not the most frugal idea, but if you pick up a main dish, all you have to add is a couple of sides when you get home. When an apple is damaged, the injured cells release polyphenoloxidase, an enzyme that hastens the oxidation of phenols in the apple, producing brownish pigments that darken the fruit. It's easy to check loose apples. If you buy them packed in a plastic bag, turn the bag upside down and examine the fruit. Seasoning An Oven Untreated cast iron rusts, especially around water. To prevent metal from oxidizing in the presence of moisture, cast iron requires a process called ?seasoning?. Seasoning is simply the procedure of baking oil into the oven's pores, and on top of the iron pores. This baked on coating will darken and eventually turn black with age. Darkening is the sign of a well kept oven, and of it's use. This coating forms a barrier between moisture in the air and the surface of the metal. This also means that the meat lacks some of the flavor held by meat that has the bone attached. In order keep the flavor, you must cook filet mignon quickly. This can be done a variety of ways, including broiling and grilling. It should never be cooked beyond medium rare, because the more done it is, the less tender and more dry it becomes and the more flavor it will lose. You should always use a dry method of cooking, even when it will be a quick method. Methods of cooking that are dry are such types as roasting, pan frying, grilling, broiling, etc. Since this cut of meat is more dry than others, you will not want to cut the meat to check to see if it is done. Instead, you should touch it. The touch-method of checking is not as hard as it may sound: How to Bake: Muffins (with recipes) Muffins are a mainstay around our house. They are as nourishing as they are good to eat. They are quicker and easier to make than cookies and usually contain much less sugar and fat.
